Applications:
Ideal for reverse spherification without adding flavor to the mixture, allowing sweet spheres to remain liquid inside. Causes thermoresistant gelling reaction in contact with the alginate mixture. Bakeable pastry fillings, instant dairy desserts, foam stabilizer. It is used to enrich products with calcium.
Storage conditions
