Sweetener derived from sugar presented as a fine white powder with a slightly sweet taste. It is characterised by being very stable, not very hygroscopic and very resistant to high temperatures, remaining transparent below 160ºC. As it crystallises more slowly than sugar, it can be moulded in many ways, creating shiny, non-sticky and transparent decorations.
Applications:
It is used to make decorations of all kinds, transparent and crunchy.
How to use
Melt at 120ºC. Let it cool down to 70-80ºC and work with it to shape our decorations.
Handling with gloves is recommended.
Recommended dosage: quantum satis (for purposes other than sweetening).
Indicative dosages
Use 2g/l for soft gel; 10-15g/l for hard gel.
Storage conditions
Shelf life of 36 months under the specified storage conditions.
Store between 20 and 5ºC.
