It is a food additive based on a pure carrageenan, standardised to provide a uniform gel strength in water. Carrageenan (E-407) is a natural hydrocolloid extracted from red algae of the class Rhodophyceae.
It is presented as an odourless and tasteless beige powder.

Applications:

This gel can be used as a thickener for purees, napado products and hot jellies.

How to use

Dispersion
Dispersible when cold and totally soluble above 70ºC.
Insoluble in vegetable and mineral oils and organic solvents.

Dissolving
Pour the powder (previously mixed with the other dry ingredients) over the water, while stirring vigorously until completely dispersed.
Heat until completely dissolved (70 - 80ºC). Do not pour the liquid over the powder.
A transparent, firm, brittle, thermo-reversible gel forms.
Gelling occurs when the solution cools down. In an acidic medium the gelling capacity is reduced.

Indicative dosages
Use 2g/l for soft gel; 10-15g/l for hard gel.

Storage conditions

Shelf life of 2 years under the specified storage conditions.
Store in tightly closed container in a cool, dry place.
