It is a mineral food additive, it is used as a calcium supplement for basic spherification with alginate. It comes in the form of white pearls. Very soluble in water.
Applications:
This solution is used for direct spherification.
Instructions for use for direct spherification
Dissolution
Dilute the amount of calcium chloride to be used with cold water in a container. Shake.
It dissolves easily.
When the alginate solution is added, the spheres are formed.
Indicative doses
5-8g calcium chloride per litre water
Storage conditions
Shelf life of 1 year under the specified storage conditions. Store in tightly closed container in a cool, dry place.
